Mixed Berry Crumble Dessert Recipe

We tried a couple of delicious seasonal recipes at our house this week: Mixed Berry Crumble modified from Weight Watchers and Strawberry Rhubarb Cobbler from a modified version of my mother-in-law's delicious Apple Cobbler recipe.  The rhubarb came from our own plants too, so very fresh and yummy!

I'll share the Mixed Berry Crumble recipe here with you:

2 cups blueberries
2 cups raspberries
1 cup strawberries
1 cup blackberries
3/4 cups all-purpose flour
1 cup old-fashioned rolled oats
1 2/3 cups unpacked light brown sugar
1 1/2 sticks butter, melted

  • Preheat oven to 350˚F.
  • Place berries in a medium bowl. In another medium bowl, combine flour and sugar. Remove 3 tablespoons of flour mixture and gently toss with berries. Place berries in an 8-inch square pan.
  • To make topping, add melted butter to remaining flour mixture; combine well. Crumble little bits of topping all over top of berries. Bake until berries just start to bubble, about 35 to 40 minutes. Cut into 8 pieces; serve warm or at room temperature. Yields 1 piece per serving.
This was absolutely divine!  A perfect use of all those beautiful berries available this time of year.
